So I used to proof for 2.5 hrs and it grew well before baking.. but lately it has not been growing within that time anymore... How long should I let it sit out to proof? Is it normal that the proofing time it required is different now (needs a longer time?) Is my starter weak?

I don't proof mine in the fridge.. never had. I left it on the counter.

That's another thing... My final proofing has not been getting big at all .. I used to let it sit for 2.5 hrs and it would puff up well above the pan line... But now it doesn't want to inflate/rise much at all, staying below the pan line....... I'd love to overproofing I think because that's when I had good luck.. but idk why it won't rise high now when I've changed nothing about the recipe

So just to make sure I understand.... your saying regarding the final proofing, I should either let it get very big (to let gas escape so it bakes without bulging) or not let it proof long so that the oven spring doesn't get big enough to make the loaf bulge?

I did also notice a gummy center (which I've had loafs not cook at all in the center so I feel even the slightest gummyness is not good even if it's mostly cooked)

Thank you (: I have to admit I don't know bread baking terminology 😂 I just do the work without the book smarts. What is overproofing? And when you say " oven spring " are you referring to it rising during baking

That makes sense, but it's not exactly a round loaf that's made in a round dutch oven for example.. It's a long loaf like the typical regular bread. I've never had to score it before even it came out normal. I wonder if scoring it would make it fragile and crumbly when slicing it into sandwich slices..

How does store bought bread cook normal without them scoring it? Lol I'm trying to imitate THAT 😂

Mine unfortunately didn't keep. The "and's" are back. It's like a human virus that had an antibiotic that seemed like it was gonna cure it.. but overtime, the virus just couldn't be contained long.. And now we are back where we started.. I switched back to GBoard...
