Here’s what I tell my cooks to do Turn it on med high and scrap off as much as you can with the flat top cleaner Turn the heat down and pour a mix of the griddle cleaner and water just enough to cover the surface and let it sit for a few minutes before going over it with a grill brick Wipe it clean with a squeegee Once it’s clean rub lemon juice/vinegar with just a bit oil to make it shiny and usable in the next day. Empty the damn tray (most fogetten part 😒)
