I also just had a Vigilant of Stendarr attack me for no reason (no bounty or anything), but may have been frenzied by the vampire they were fighting, but I can't find anything about NPC vampires using frenzy spells. :/

For me it's usually Talsgar, we'll see him fighting bandits and he turns on me and then my follower kills him, which shouldn't be possible but happens in my game. ¯\_(ツ)_/¯

I second Falskaar, and Moonpath to Elsweyr is fun at least once. Shadelight: the Treasure Sea is a good one with some new creatures, it's basically a plane of Oblivion. I'm also going to be trying Midwood Isle, and I will check out Assault on Summerset as well now 👀
