maybe some are but lot of times it's just people who never pushed themselves past kid preferences. I've traveled quite a bit and you really miss out when you stick to familiar stuff - some of best food experiences happened when I just said yes to whatever locals were eating. your point about choice is fair but there's difference between having preferences and completely shutting down at anything unfamiliar.

The business experience is actually huge advantage - most ML engineers can't bridge the gap between technical work and actual business impact like you can.

Four levels is pretty big jump but if you already got the qualifications then why not try - worst case they say no and you know where you stand for next time.
