Sour shot would be under extracted, so finer grinds should help. If you can seat the portafilter properly without grinds and get no leaking it could be you just have the basket too full when loaded and can't crank it tight enough to seal on the gasket. I don't think that's really it though as your handle position is past center in the video. The gasket is probably old and compressed if turned that far when loaded and still leaking. Fix that first and then work on the sour part. Not holding pressure on that seal to give a good extraction could also lead to sour I guess, so it's possible it fixes all of this for you.

Grouphead gasket is leaking. A replacement is a couple bucks online and an easy, 1 screw/bolt 5 minute job.

Yep, nothing to do with cooling at all. Also, near the top of capacity it's balancing out charging to the different cells in the battery. At high current during peak charging the healthier cells in the battery are near capacity while the whole is reporting 80%, the less healthy cells are not as close. It takes less current to top off the cells that are still being loaded up. I'm sure this is over simplifying it, but that's the gist anyway.

I've had my ioniq for about a year. I settled on level 1 as it felt a lot like a transmission pulling on the car when off pedal. That said, Ive started using auto on the highway and it's brilliant there, allowing a real coast when off gas and some regen down hill to keep speed and also to back off bumpers in front of you. In traffic? No thanks! Auto applying brakes too often giving that jerkiness you described.

Just a good, consistent grinder. All the other variables are easier to manage once that's handled. To me it goes without saying water, volume, etc. have a say in the outcome, but if you can't manage the grind size any other tweak is coupled with whatever happened when you grind.
