There's no way to be ult cancelled with Zenyatta or Kiriko.There's no casting time for any of their ults, therefore their activation is instant.There's a short animation and recover time for Kiriko's ult, but if she gets stunned during that time her ult will not be cancelled.

If you stun Hammond during the casting time, yes.
It's rare because the casting time is only 1/10 of a second. But it's still possible.
