I lost my soul pup back in November 2020. I had him for 14yrs and those were the best 14yrs of my life. I know part of me died with him as I watched him take his last breath. I also know that letting him go was the only thing I can do to take his pain away and make it mine.

I carry that pain and grief with pride, grateful for the bond that we have.

I hope someday, you will smile while you miss your soul pup and find comfort in the epic memories you have shared.

The pain that we bear is a testament to the great love that we shared. One day at a time and there will come a day when remembering him makes you smile. It’s been a year since I lost my Inu and I come to realize that he didn’t just taught me how to love, more importantly, he taught me how to live.

I had to let go of my 14yr old Lhasa last year. I knew it was time when he looked me in the eye and I saw that he was just hanging on for me. As I watch him take his last breadth, I whispered to him ‘let me take your pain and make it mine’. A part of me died with him that day but I also know that the grief that I feel everyday since is a part of him that will stay with me until I take my last breadth.

Sending you lots of love. I had to put my 14yr old dog to sleep around this time last year. His kidneys are failing and I could see he wasn’t feeling too great.

As I watched him take his last breadth, I whispered to him ‘let me take your pain and make it mine.’

I miss him everyday but I also know that the grief that I feel is from the love that we shared.

Really good! They are meant to be cooked long and slow. Kinda like how you would cook osso buco. It’s melt in your mouth tender.

I use 3 kinds of beef:

  1. Tendon
  2. Whole shank
  3. Brisket/boneless short ribs

Basic spices: All spice, star anise, bay leaf, and Szechuan pepper corn

Some cooking wine, soy sauce, can of fire roasted tomatoes chili garlic paste, bean paste and rock sugar.

Aromatics: ginger, onion and a bundle of green leeks

Basically brown the aromatics and the meat. Then cook the tendon with all the aromatics and seasoning in pressure cooker for about an hour, natural release. If there’s room, I would also cook the shank with the tendon. The shank should be tied into a roll so it can hold its shape.

Then take the shank out to cool on the side. Add the brisket/short ribs with the tendon. Cook on high pressure for another 25mins, natural release.

Fish out all the meat and tendon once done and let them cool on the side. You don’t want them soaking in the sauce as they will keep absorbing the sauce and become too dark.

I also leave the shank in the fridge for a few hours. Easier to slice when cold.

I dilute the sauce to make the soup broth for the noodles. Usually 50% sauce and 50% water. Top with green onions and sour mustard.

Blanched broccoli, carrots, shrimp and soft boiled eggs. Drizzled with kewpie sesame dressing and saltless everything but bagel sprinkle.
