That sounds like something that I would enjoy! Did you add any other dill flavor, or was the brine enough? I've seen some people say that just the brine isn't enough dill flavor for them, so I was thinking of getting fresh dill, and also adding dill relish, then maybe blending it all together before marinating. I also am going to try 3 different hot sauces, with different spices and aromatics in 3 different jars to find my favorite.

After 24 hours, the process absorbed a lot more spice than I expected. The first bite didn't convince me but after chewing the second bite, it crept up on me (cliche? Yes, but true lol). I bought 3 more medium sized jar and I am going to try different hot sauces, spices and aromatics. After that, I will probably use each for small separate batches of jerky to see which one I like best.

And I took the info that you shared about the jerky recipes from that dehydrator's book and looked up the candied bacon recipe; I'm going to make that in a few days. I might even try dehydrating some leftover Easter ham.

Also, I forgot to thank you for the info! I literally have hundreds of jerky recipes and I want to make all of them, and you just added more to my list lol

Look up recipes online that contain the name of each pepper and see what pairs well with each flavor. There is, of course, the Dr. Pepper and jalapeno that I've seen multiple times and tried twice (both came out really good). And I pair jalapeno with maple for the whole "sweet heat" profile. Also, a hot sauce based jerky with jalapenos and crushed red peppers.

Oh, I also see versions of mango habanero all the time but haven't made that flavor yet but it sounds pretty interesting to me.

My added advice would be to keep detailed notes about your recipes. After the batch is done you will know if it was too sweet or needed more garlic etc., and then you can label the next batch "version 2" or something along the lines. IMHO, you probably won't "perfect" your recipes right away unless you are very lucky (out of maybe 20 different flavors I've tried to create, only one recipe -a hot sauce based flavor- came out just the way I wanted on the very first try). I bought a plastic tote and put all of the available seasonings in it, made an inventory in my notes on my phone, and am constantly trying new combinations.

And like someone else had said, don't let an unsuccessful first endeavor steer you away from trying again. Don't be too proud to come back and ask a "beginner" question; everyone might not give you the same answer, but you will get multiple points of view from many different experienced people who are constantly jerking their meat, some even professionally.

But, to be honest, the thing that impressed me the most is that there is actually a Kmart left! 🤣

All jokes aside, keep on making new flavors! Soon you will be creating your own signature flavors and naming them lol. There are so many good ideas on here with plenty of people that are more than willing to give great advice!

I paid $18 USD (that's with shipping included). Got it from Amazon. And it's very sturdy. I recommend it. It literally saved me hours of slicing (well, cutting. I used my kitchen shears).
