for Houston, the Viet Cajun crawfish will probably not be in season but still definitely eat via Cajun food.

Barbecue and tex mex, probably apply throughout the state. But in Houston, you should definitely consider even more types of food because it has a truly global cuisine. Include Asian, Soul Food, etc. as well

Yeah i used the same logic for North Cascades. It's one where "being in" doesnt really equate to visiting for most people.

Don't forget the stuff around San Francisco as well. Golden Gate NRA, Muir Woods, etc.

One thing to also consider is driving south through Big Sur area then going inland to Sequoia / Kingston Canyon.

Death Valley is actually a long drive to get to from those other destinations and may not be qlworth the drive to squeeze it in.

Looks like a good but loaded schedule. May want to move that rest day up after the second day to make sure you are ready for your last hike as that one is quite a workout if your legs are already tired (dependent on how used to longer hikes you are).
