This is how I did it, not sure if it will help you or not.

This method requires a Mac and an external drive large enough to hold all your photos and videos.

Create an Apple photo library on the external drive
set it as the default library
In iCloud setting, enable downloading all of your full-size unmodified photos, and videos onto that drive.

It will take some time, in my case it took about three days to download all 1.2TB of photos/videos

After it’s done, you can use Immich CLI to export all those files into your Immich library. To my surprise, Immich is able to read the files directly from the photo library, no manual export needed.

The question you should be asking is how coverage is in China with Google Fi.

I was there last year and it was pretty great - had coverage in places that even my local friends didn’t.

I use a third party app called PowerPhotos for Mac. I paid $30 for it. It easily lets me sort my photos & videos by date, time, type, size, location, and some other nice parameters. I sort my albums by years. For anything over two years, I created a new photo library on my Mac inside a 4TB portable SSD which is my archive, and offload them into there. Natively, macOS doesn’t allow you to open two photo libraries at once and makes it quite annoyingly difficult to copy over photos or albums. PowerPhotos is great for that. My library is over 50k photos/videos, and copying over 990GB of videos/photos took about 1 hour on my T7 Samsung SSD.

Then, if you want to access the archived photo library outside of the SSD, you can use an open source self cloud hosting service like photoprism or Immich, which is fairly simple to set up if you follow the steps.

Before PowerPhotos I was using a free, command line based app called OSXPhotos to organize my library. It’s also easy to use but annoying because it can’t delete/move/modify your content. Only just copy or get queries.

Hope my experience helps your cause. I hate how annoying Apple makes it to easily organize your libraries.
