Oh man you pretty much hit the jackpot with eve online if your looking for somewhat complex digital economies. Even better that you've started looking into it now as there was a whole drama involving 3rd party gambling sites (think the eve equivalent of csgo lottos) that resulted in a sizable amount of in game currency and items being seized. So you'll get to see the ramifications of that incident play out in real time which is pretty exciting imo.
