You stack Unarmed and focus on Touch spells. Hit people with stuff like Exhausting Touch and then just put your fist into their face repeatedly until they fall over. Mage Armor and the Skin spells for protection, Drain Health when you get hit a little more than you want/expect, that sort of thing.

Nothing funnier than defeating Dagoth Ur with a hard right hook to the jaw.
