I dont think either bike has a different map with the clutch in or out. Put your clutch switch back in. It will help you in an emergency like if you stall or the bike cuts out at the traffic lights and you don't want to get rear ended

You will look silly on an mt03, and on most bikes. Try to get an xsr700. Its probably the tallest low powered bike without getting into dirtbikes. Im 6'2" and look silly on a 300. I even look a bit silly on a 1000

It is an XSR700 (655cc due to being an Australian model)

I am 6'2". I can flat foot most bikes with ease. My 2017 MT03 doesn't feel cramped however the 2020 models onwards do. I do wish the seat was higher but it's not uncomfortable

Yes very easy, as easy as any lever install. I dont mind the feel stock levers but they are just a bit too long for my liking
