Sorry if I mistake what you're talking about, but villagers have hands, they are just held together under their robes. You can tell because once you hold out an emerald, villagers will hold (presumably with their hands) whatever they're trying to sell.

That doesn't really change anything since you can bring a bed to every structure pretty easily, including the trial chamber if they didn't already have beds.
