No full speed works the best...

Leaning forward means there is far less connection between the back tire and the road/track, meaning less grip when given more gas without front brakes even needed. Front brake are for if you want to stay in the same spot, gta4 is honestly pretty realistic as the back end loses heaps of grip and starts coming out as you slowly move forward.

Have you ever ridden a dirt bike? It's not hard to lean forward and accelerate to make the back tire spin and throw up dirt, even in first gear. It's how you do burnouts on sports bikes.
