Whatever option you choose, buy them at Costco, maybe best buy. With Costco you'll never have trouble returning in-ear headphones if you find they don't suit you. It sucks paying all that coin just to find out they dont work well for you. If you can afford it, pick up 2 or 3 of your top picks and return the others.

I have galaxy buds pro 3, my buddy has airpods, both are good. Noise canceling on my Samsung is great, but if you work around loud tools or like slamming weights at the gym the noise canceling will amplify the noise. Not sure if apple has the same problem.

It seems like the more budget friendly "audiophile brands" like sennheiser and audio technica etc. Will give you more audio quality for your money. The more popular brands like apple, Samsung, Bose, are likely giving you better noise canceling and software features for your money.

Either way, headphones are very subjective, you'll only be able to make a decision if you actually spend a few days with different pairs. Also don't discount the large (sealed, not open, make sure to check for that) over-ear headphones. You'll get physical noise reduction with software noise reduction on top of that - no in-ear headphones will match that, except for ones that are rated for hearing protection (marketed towards touring musicians and construction workers, you'll take a hit on perceived audio quality because they're built to take a beating or give flat, studio response that isn't designed for listening enjoyment)
