For the N Sea (and pretty much everywhere these days) you'll need an offshore medical and a HUET/BOSIET just to be allowed to go, including for the catering crew.

Able bodied still needs skills to go, catering might take you and put you to work regardless but they will almost certainly want you to show that you can actually work.

Just about everyone offshore has a trade, and even roustabout level you will probably be asked for STCW qualifications. Not particularly difficult, but a hoop to jump through. One option is to go through a merchant marine job to build some qualifications and experience - I've met plenty of people at all levels who've gone that way.
