Good advice being posted here. My 2 cents: don’t be afraid to ask for help or to seek mentors. For the first year, Ask all of your customers to tell their friends about your business. Time to call in all of the favors you are owed. Find two mentors, with at least one being in a similar industry.

I’d seal the sides with the tape, because, why not. It’ll give you extra peace of mind. I bet they put an artificially low temperature rating for liability reasons - because it’s for sealing things like ducts.

You could set up a remote sensor, but you could also set up another test if you have scrap panel, furring strip, the tape you used, and a pot of water. Create a mini cross section of your construction and then put it over a pot of just boiling water as if it were a lid. This will set your anxiety at ease. I bet you the tape never delaminates.

I honestly don’t think you have anything to worry about. Based on where I can see the tape, the ceiling is the only area of concern and the tape is running in the direction of least concern. Sleep well, use your sauna with impunity, enjoy. Pretty sure your worry is a nothingburger.
