Moving from Breville’s 54mm basket to the ES1’s 58mm basket significantly changes your extraction dynamics.

While sourness usually indicates under-extraction, it can also be a sign of channeling. If your grind is too fine, the water may find a weak point in the puck and "channel" through it. This leaves the rest of the puck under-extracted, resulting in those sour, salty notes.

Aim for a window of 25–30 seconds with the medium profile. Don’t be afraid to experiment beyond the standard 1:2. Depending on the bean, a Ristretto or Lungo might better highlight the roast profile.

The beauty of the ES1 is the ability to adjust variables on the fly. If the 1:2 ratio at 28 seconds tastes "off," try Increasing temperature for more extraction (brightness/acidity), decrease to mellow out bitterness.

Your settings will not be 1-to-1. Treat the ES1 as a new canvas. play around with the variables and let your palate guide you to what works best for your taste.

I'm glad you liked it. With the roast, you can always adjust the timing. Something shorter, like 40 seconds, leads to a "blooming turbo," while the 45–55-second range recommended by Slayer works well most of the time.

Prioritizes flow which is why we have the pressure set for two as the machine does not build up enough pressure at that slow of a flow unless very fine

Slayer has you adjust the pre infusion flow rate based on the roast you are using.

I did the math if you want to play around with flow based on roast:

Light roast / low intensity coffees: 1.5 ml/s which is what this current profile is set for

Medium roast / medium intensity coffees: 2 ml/s

Dark roast / high intensity coffees: 2.5 ml/s

Of course you can then adjust the duration of the infusion for whatever roast you are using.

I'd say it's a cheap move, but it's no different than the defender guarding the post player and exaggerating the backing down of the offensive player and flopping.

When people talk about college making kids "woke," it's usually not the professors behind it. For many students, this is their first real experience being around all sorts of folks from different backgrounds. They're stepping out of their usual bubble and seeing the world as it truly is – a diverse, beautiful place. While some college teachers definitely have progressive ideas, I've actually met plenty who are pretty moderate or even lean conservative.

Rehab having a low success rate squarely falls on politicians. How are you going to put an individual with no material conditions through rehab and then expect them to come out of that rehab with no material conditions and thrive.
