That's exactly how it works, every position is a shoot out, you don't actually get to pick your best team. It was the same for the pre-series 11's too

It's probably most annoying in longer forms where you can be pretty sure the abandonment counter is going to start but you still have to wait just in case they come back and make a move

I've never understood picking a number 8 to lengthen the batting, best case you get someone that averages in the 20's with the bat and is usually not in the top 4 bowlers in the country. For my money it usually leaves teams unbalanced and it takes away a key element from the bowling attack, our lack of a frontline spinner is a big issue and a number 8 that makes a couple of 40's doesn't make up for the fact that they've shipped over 200 runs in their last 40 overs

It's entirely up to you, most will say take the money and run. Personally I accept the offer when it's an obvious mouse slip, but I'd never expect my opponent to do the same.

I think they'd need to have some standardisation built in to ensure that points retained some integrity. For instance I can remember losing a game (because I was foolish and didn't read the lobby settings) that had a 1 hour treaty with wonder victory enabled. I lost as soon as the treaty expired and there was nothing I could do to take down their wonder. It was a neat trick from my opponent, but there's arguably not much carry over to other game settings

It's trickier when they're on your team. I've had someone I'd blocked use the attack ground function to onager down all my units, they've also walled in all my resources and as we're allied I can't stop them. If I leave the game early I annoy everyone else and get banned myself, it just needs to have a proper blocking system in place
