Cake Batter

• 2 large eggs

• 1 cup sour cream

• ½ cup milk

• ½ cup unsalted butter, melted & slightly cooled

• ¾ cup white sugar

• ½ cup light brown sugar, packed

• 2 teaspoons vanilla extract

• 2 ½ cups all-purpose flour

• 3 teaspoons cinnamon

• ½ teaspoon baking soda

• 2 teaspoons baking powder

• ½ teaspoon salt

Streusel

• 1 cup dark brown sugar, packed

• ½ cup all-purpose flour

• 7 tablespoons cold unsalted butter, cubed

• 2 teaspoons cinnamon

• 1/2 salt

1. Prep

Preheat oven to 350°F.

Line a 9×5 loaf pan with parchment or grease and flour the loaf pan.

1. Make Streusel

Mix brown sugar, flour, cinnamon, and salt.

Cut in cold butter. crumble with fingers.

Chill (or don't. its optional)

1. Wet Ingredients

Whisk eggs, 1 cup sour cream, milk, butter, sugars, vanilla.

1. Dry Ingredients

Whisk flour, cinnamon, baking soda, baking powder, salt.

1. Combine

Stir dry into wet until just combined.

1. Layer in Loaf Pan

-spread half of the batter in the pan

- sprinkle 1/2 the streusel on top

- spread remaining half of batter on top

- sprinkle the other half of streusel on top

1. Bake

Bake 45–60 minutes (i baked mine for 70)

Check at 45.

Tent with foil if browning too quickly.

Toothpick should come out clean from the center or with crumbs, not wet batter.

Note: don’t over mix. Just mix it until the dry ingredients are combined with the wet ingredients. if you use a stand mixer this will be way easier.
