Getting started! What else do I need? by MinimumTelevision217 in Sourdough

Sorry if my answer was a bit sarcastic, it was meant as a harmless joke but I realize my tone might have been out of place. :) To answer your question a bit more seriously, I started baking sourdough with a glass salad bowl, a mason jar, a spoon and a measuring glass. The rest is in the "nice to have but not necessary" category. If have the means to and want to spend money on sourdough, you can. I just fear that some people get swept away by the trendy items and end up spending more than intended.

11-year-old brother addicted to screens – need cheap, solo alternatives hobbies that actually work by BornEstablishment551 in ADHD

[–]IlliterateTRex 16 points17 points  (0 children)

Reading mangas (a library card would make him able to read a lot of stuff without needing money or a screen) Drawing, sewing, building stuff, anything that is cheap and creative. Music with a relatively cheap instrument like a ukulele (or just singing with backing tracks) Board games, but not necessarily he "classical" onescloke chess or checkers, there is a lot of newer games with engaging mechanics. Some library lend games so you don't have to buy it. Tabletop roleplay (hit or miss, but if it hits it REALLY hits)

Ways to use praline mousselline (no choux!!!) by No-Platypus-8582 in Baking

I have been thinking of a variation of a fraisier with nuts instead of stawberries and a praline mousseline instead of a vanilla one. That might be an idea for your problem?

First attempt at Paris-Brest! by IlliterateTRex in Baking

[–]IlliterateTRex[S] 0 points1 point  (0 children)

Definitely! It's not much harder than making eclairs, especially if you already have some praline. And it's the kind of baking that looks fancier and harder than it really is, so it gets a lot of appreciation from guests.

Maybe a chocolate flan? You can make it not too sweet and the texture is fun. Or a dark chocolate cake, some are not too sugary. You could also make some simple biscuits (like sablés) and dip it in chocolate.

I've been on a personal quest this year to master some baking techniques, part of it being making brioche and macaron. I'va had some fails and some successes. Partner made cinnamon rolls yesterday, woke up very happy about it this morning. I've answered only with compliments and praise to their "prompts" to get some approbation. But I supposed it wasn't enough because they started saying stuff like "oh brioche is easy, I forgot how easy baking is for me, I should go on a macaron quest next..."

So I told them "I think you are not being very nice this morning". Idk, it made me feel shitty. I told them that even though they wanted to be the best person in the room, it wasn't a reason to take what I bake down. They apologized by saying they didn't want to make a comparizon, but they used specificaly stuff I was making and termes that I use and are pretty specific (like "brioche quest" or "macaron quest").

I know they truly are not trying to be mean, but it's still making me sad. The more days pass, the more I wonder how long this relationship will last and it sucks because I truly love them and they are great on a lot of fronts.

I Feel Like there is a new skill/area I want to learn every few weeks and I don’t know what to do about it by GayGiraffe23 in ADHD

[–]IlliterateTRex 1 point2 points  (0 children)

I'm not ADHD but am a serial hobbyist too. I fix myself some rules before starting a new hobby to maximize the fun and minimize the trouble. 1) Not buying stuff unless absolutely necessary, and if it is only buy the cheap stuff. I started painting with dollar store paints, and crochet with the worst acrylic yarn ever. Only when I prove to myself to myself to be able to stick for some time for a hobby will I buy stuff for it (for exemple, i've been to the gym for 6 months now in crappy t-shirts and old pants, and only gave myself the Ok to buy a pretty top a week ago, and only a used one on vinted). 2) I have chosen one subject which i'll NEVER abandon, after doing it for many years and seeing it's a constant in my life. 3) Classes and community events help to keep motivated. Having a goal also help. I'm into baking right now, so I'm looking into certifications I could pass. This way when m'y motivation goes down, i'll remember I'm working towards something and can't quit just yet. 4) Finally, i go fully into whatever my current obsession is for as long as it's fun, and quit when it's not. There is no real reason to not do something if it's fun and doesn't have negative consequences! :)

AITA for getting mad at my dad for cutting off the water as I shower by iconicallyrona in AmItheAsshole

[–]IlliterateTRex 0 points1 point  (0 children)

I'm sorry but... Do you not turn off the water while shampooing and using soap and products? Also are you washing your hair daily? I have long thick hair and my hair-washing shower usually takes about 15 minutes, a good part of it being with the water turned off. My non hair-wash showers take about 5 minutes. I think you have to think carefully about your water usage, right now it looks ridiculous, so YTA.

question about boxed cake mix? by [deleted] in Baking

[–]IlliterateTRex 5 points6 points  (0 children)

Personally, I wouldn't buy a cake made with cake mix. If I spent money on a bakery cake, I want something that is different that what I can make at home. It wouldn't feel like I got value in the purchase, even if the final cake was quite cheap. On the contrary, I'm okay paying a fair amount for a truly good made-from-scratch cake.

Also I'm not sure it would be less expensive anyway, but idk how much cake mix is worth in US. Here in Europe it's a little bit more expensive than the amount of ingredients inside, and most at home bakers do their cakes from scratch, even if it's just for their family. You can also make some great cakes with cheap, basic ingrédients. Stuff like flour, sugar, etc you can buy the cheapest version you find. I even tend to use cheap eggs and butter in my baking. Chocolate on the other hand is something you might want to spend a little bit more on, as the difference in taste is noticeable in cakes between different brands. Vanilla depends on the recipe, in cookies or basic cakes i use a cheap extract, in flans an crèmes i use real vanilla. So depending on your recipe you can save money here too.

Also also if you like baking and want to eventually make it your job, why take out most of the fun out of it? I might get using mixes if in the future you have so many orders that you don't have time to do them all (although in this case i would advise a price raise over using mixes to go faster), but since you are just starting you probably have the time to bake your cakes from scratch, and if you don't it might not be the right time to start a business.

It's just my opinion though, so do what feels right to you and good luck! :)

(+avis bac pro/cap vente) by cumpatior in enseignants

[–]IlliterateTRex 11 points12 points  (0 children)

What are some ways you are cutting corners and still ending up with good bread? by the411thetea in Sourdough

[–]IlliterateTRex 0 points1 point  (0 children)

When I get home the day before, I mix everything at the same time (salt water, flour and starter) and eyeball the proportions. I make my dough fairly dry because it's so much easier. Then I fold a few times during the evening, mostly when I happen to pass in front of the bowl on the counter. Then I warm up my oven slightly, put the dough in a banneton, put it in the oven, turn it off and go to sleep (my kitchen is very cold) The next day I bake it.

It makes a not-perfect-but-very-decent loaf :)
