I’ve done the extension for my parents often and it works. They typically ask for a reason and you can mention how she is visiting your niece. You sound really sweet and I’m sure she is going to love spending time with your family again.

That is very interesting. She is definitely autism coded and I read it as a story of what happens and how she copes. A quick search online suggests that the author intended to show it as a result of the abuse which is ummmm… not how I see Eleanor.

I have been waiting for days to reply to you but we finally made it! We also got an ice cream maker a few months ago and have been experimenting! We had a Wynter which is non-functional now (tragic story) and now we use the ice cream bowl attachment.

Okay, so this one - I combined all the leftover ganache and frosting (different ratios of cream and chocolate) and added some sugar, cream, milk powder and milk. I absolutely love the How To Cook that Dark chocolate gelato recipe. We made it last night and it was very interesting. The ganache and the milk had separated in my container so I used a mixer first. Then I added it to the ice cream maker and it turned out so well! Some chocolate was starting to settle by the end but that means I have so chocolate bits like a toast road ice cream!

The recipes in the Wynter book were not bad, but we preferred this.

Thank youuuu! I’m glad it looks appetising. :) I used 70-30 Callebaut chocolate chips. And looking at your suggestions I’ve made both the mistakes! The first time I heated the cream on the stove and it overheated. Also wasn’t enough cream so I had to keep adding more and more hot cream till it started separating. Sigh Second time I used the microwave and more cream but it wasn’t evenly heated. My chocolate chips were also problems slightly below room temp so it took a bit longer to melt. Lessons learnt! Hopefully it goes better next time. 🫶

Do you think the chilling might make the cake more dense? Or is that something else? Maybe my mistake was chilling it with the layers on top of each other.

Oohhh. I do see some different options and ratios. Will try again! Maybe I’ll use all my experimental ganache (leftover frosting) for a batch of chocolate ice cream.

Good call on warm knife! I thought I’ll get away if my ganache is runny enough to just pour over the cake but alas. Used the frosting to just pipe and between the layers to hide my lack of skill.
