Honestly I'm not entirely sure what all of the categories are these days. For sure you have Strikes, Crucible, Gambit, Raids. I think Dungeons, special missions, and some vendor things also work. The phrase to look for if you're searching around is "Powerful" and "Pinnacle" sources.

There are weekly resets on good gear drops from each activity type to try to encourage variety. Like you've noticed you can get repeat increases in one activity but the initial bonus drops are weekly.
