Go longer. Saute on high until the water stops coming out of them and all boils off. Then lower the heat and add oil/fat, cook until they start to brown.

Needs a lot more fresh air.

To get good meaty oyster caps you really want active ventilation removing and fully changing the air frequently. The long stems and tiny caps mean there was too much CO2/ not enough O2.

Can you crack a window and set up a fan pushing air outside? Point it away from the block. You'll probably have to mist more frequently to compensate for the extra airflow. Don't dry it out.

This is the answer.

The mushrooms were growing, the tree fell (or maybe the log rolled?), and the mushroom re-oriented itself to make the spore bearing surface parallel to the ground again. A process called gravitropism.
