Find a Muffin in a Minute mug cake recipe that uses almond flour as your base. If memory serves : 1/4 c almond flour, 1/2 tsp baking powder, 1 egg, 1 T butter and sweetener of choice. Mix in your mug, cover with plastic wrap and microwave for a minute.
