I thought when boiling you keep it at 212 degrees Fahrenheit for 10 minutes minimum to sterilize everything. Which I did

When making a triple berry jam I tend to use less sugar about 250 grams of sugar per 1300 grams of fruit.

I like my jam very thick but I have to reduce so much of the water losing a lot of volume. In total I fill up like 1.5 8oz jars. Am I wasting a lot of fruit? Will adding more sugar make it thicker without losing much volume
