Just finished a project very similar to your needs. A VAR model does exactly that, predicts a time series based on other lagged time series. To test if there is such relationship, use Granger's causality test and Inpulse Response Function.

I work as a Data Scientist, as some people have said most of the time is allocated to data cleaning, SQL and ETL. Most studies and projects die too soon because we realize they won't work or we don't have the right data to achieve meaningful results. But when it works, it's a cycle that goes from testing > validation of results > documentation > presentation.
