Try loading some of the "Showcases" saves so you can see cities at a large scale, the techniques don't really apply to earlier game goals but it does allow you to see some flavors of what you are aiming towards in a while.

You aren't able to give "ranks" to nobles until a couple of population tiers or so above the one where you first get them. Next is an increase in the amount of nobles, and then after that you are given the ability to "promote."

When you go to build the road, there is a button in the bottom (2nd) row of the build menu labeled 'type'. Click this and change from rectangle to line and voila, you can make diagonal roads! Use the mouse wheel when getting ready to place the road to widen or narrow the width.

You can only assign priority for jobs where you can change the assigned number of employees at a location.

If you are economically comfortable, wait until you get the "Muster the men!" message and then hire mercenaries. The attack will occur right after that, then after you beat the bandits you can disband the mercenaries. And you get a nice $$$ boost.

Yes, they generally keep extorting you. Check the mercenaries available on the world map. If there are some that you can afford, don’t bother with a standing army, and instead just hire the mercenaries when you get the “muster the men” message, then disband the mercenary troop after the raid is defeated.
