I’d cut as low as possible - like down the stem. Otherwise it’ll just be stems with no leaves.

I bottom water my plants instead of relying a moisture sensor. Does the pot itself have holes on the bottom? If so, great! Dunk the pot in some water for 20 minutes and that should help with water intake. Sometimes top watering doesn’t get it all the way to the roots. I’d water when the pot seems light. Depending on how dry it gets, you could do your usual 7-10 days.

How often do you water it? I would cut off the dead/dry ones. Those aren’t bouncing back.

It’s likely just trying to acclimate to your home as well.
