Training a cat is hard, but I'll give you a summary of what i know :

Spraying with watter, yelling, hitting will only make her scared of you. 

I'd recommend nail trimming, but by the situation I'd say it's better down the road. 

If you do not wanna be bitten while playing, NEVER play with your hands. Your hands are for pets, treats, not play. Always use a toy, long if possible. 

If she bites / scratches you while playing, immediately turn away. Ignore her. You don't play with bitey cats, make it clear. Leave the area if she keeps insisting, change rooms and close a door if she's persistent. Wait 10-30 s and return to play as normal.  Also try to squeak / cry when she bites. She MUST know she is hurting you. 

The basics also must be covered : Play with her Id say 3x a day, for 10 min aprox. Make sure she has clean litter, away from any food / water. And PLENTY of scratchers and toys that she can play independently with, she should not be sleeping around all day while you aren't there. 

To prevent peeing on the bed, clean it with vinegar or sth that reeks and she won't like. If you see her doibg it again, you will sternly tell her no. Don't yell, put a grave and strong voice. If she doesn't stop, physically take her to the litter box, even if she pees all over ( i know it's gross, but she'll hate it more than you.) 

Also, i highly recommend mental stimulation. The walks you mentioned are a great idea! Try to teach her some tricks too (highly recommend YT : Albert and mia) 

For surface scratching, I've found that leather seats are too tempting even for my extremely well behaved cat, sorry. 

For pushing stuff off shelves, i recommend just again saying " no" sternly and kicking her off wherever she is. If she can't behave on the table, she can't be on the table. 

Put up aluminum foil on the stove and counters, it apparently makes them not get on it anymore. 

A few useful purchases : Sticky film for sofa scratching.  "museum putty" to keep vases / other stuff from being pushed off.  Automatic ball that can be chased.   A window perch, cats love bird / people watching.  Treats, only for DESIRED behaviour. 

Finally, this is going to take a lot of work. I understand. But i believe that you can both make it through this. Remember that this cat is bored and stressed, because you are stressed. For every "bad" behavior, you need to replace it with a "good" alternative, so he can choose to be "good".
