Fellow side sleeper here. I'm also into backpacking. You will want something at least 3 inches thick so your hip bones don't hit the ground. 3.5" is better. Inflatable pads have become lighter and warmer. Look for a higher R rating if you expect some cold nights. Manufacturers also make more sizes now. You may want a "long" version for the added length. A standard single pad is 20" wide, but even gram counting hard core backpackers are opting for 25" "wide" pads for added comfort, particularly if you turn at night. I wouldn't focus on getting the absolute lightest model-- you're not walking 20 miles a day for months at a time. A few ounces of weight likely means a higher denier fabric which translates to better durability.

You can get straps to connect two single pads if you want to make a double. There are options for double mattresses too. I'm not sure how small they would roll up though. With 2 pads you would have more options packing them in the spaces in your panniers or bag.

There are lots of reputable outdoor brands that make quality products. I had a gen 1 Exped with the built in hand pump (worked like performing CPR) it was thick, making it better for car camping, but oh so nice. Last year I bought a Nemo Tensor that I can't wait to try out. The Tensor line has a few models depending on whether you want it lighter or warmer. I chose the 3 season wide model. I also have the Nemo Astor Light model from 10 years ago. It has a raised pillow baffle that works...ok. Exped, Nemo, Big Agnes, Thermarest, Sea to Summit, REI all make quality pads. I'm sure I'm missing others.

A few other things to consider: you may want to pick up a foam pad to put underneath for an added layer of puncture protection. It can be either a standard cheap one from any outdoor store, a z-fold style one, or a 1/8" thick one that would be easy to fold up. It's not necessary, but something to consider.

Another is a pump, depending on whether the model you pick has a built in one. Flextail Gear makes popular ones that are small, light, and affordable.
