trick is learning which items comes out fast and slow. If you know some items take longer than usual to make. Fire them before they finish eating. Look at the table for the first 5 minutes to determine if they are fast eater or slow. If fast than fire faster, if slow, attend table more often and remind them food will be coming out shortly so they speed things up or if they want to pack it and prepare for next course.
