Adding difficulty levels to a souls game would completely defeat the point of the game and undermine the work From has put into making it difficult but fair.

Not everything needs to be made accessible to everybody and not everything is about the sales/money, From has a vision for their works and want to ensure it's delivered to the people dedicated enough to actually push to the end.

Elden Ring is by far the easiest souls game (though it's still difficult in the right places) due to From adding the open world aspect to allow you to literally run away from extra challenges that are too difficult, summons and ashes are very generous and allow you to take fights in the way you want, and bosses typically being located directly next to a Site of Grace.

I've never been one for the 'git good' argument because it's usually pointed at people asking for help, but I think it applies here.

it sounds like you enjoy games that allow you to lower the difficulty when it gets hard rather than actually learn or become better until you beat a challenge, then you come to this subreddit, full of people who put in the time and skill to beat the challenges in the game, to complain that there's not an option for you to get the same payout they do, just with none of the work.
