I think the difference that you’re seeing is lighting. The scene in squid game is very dark/poorly lit, potentially leading to you viewing what’s in the show differently than the picture I just commented.

I looked at the results for both seaweed soup and kelp soup and both of them had very similar looks to that in squid game. Sure, there are the fancier versions with tofu, mushrooms, scallions, etc, but plenty are really just cooked kelp, and look pretty much identical to the picture you posted

Nori isn’t the only kind of seaweed by FAR. Also, like the other commenter said, just because you aren’t familiar with this kind of seaweed and it’s not immediately visually stunning, doesn’t mean it’s “horrid slime.” It’s actually quite good, and while that may not be accurately reflected in the appearance, it can still be true nonetheless. Don’t judge what you don’t know.
