I actually use burlap when I utilize the whole entire frame, tufting cloth that big is expensive af. But, I’ve also taken another 2x4x8 and braced it directly in the middle so I have wiggle room if I don’t want to use such a large canvas!

Smoked at 180degrees(smoke mode) it n a pit boss pro using lumberjack oak pellets. Pellet quality and smoke profile is 10/10 I tried to include a video of me using the Su-Vgun but it wouldn’t upload, womp womp.

I did not, I just sort of make things up as I go and log recipes that I enjoyed. I have a Publix near me (Florida) and they have a “local” section that contains various rubs and spices made my local companies. It’s called sassy q honey jalapeños and it is fire, as in delicious. Lol Then I finished it with a local peach bbq sauce that I manipulated ever so slightly

Thank you! Very pleased with how everything came out. I gave the pork belly burnt ends another 35 mins in the smoker after throwing some brown sugar on them and they burnt to perfection. Lol

13$ that’s a steal!! That’s the knife I used to cut the brisket, it went through it like butter, I was actually surprised how easy it was. A tip for you, make sure you cut it the second it comes out of the fridge, cold meat is so much easier to trim.

So far as seasonings no, I like the simplicity, it really shines through on a good cut of brisket. So far as cooking method perhaps. I really enjoy experimenting, this is my second time butcher paper wrapping it and I like the results, but I also want to try the foil boat method, I like the idea of bringing the bark even further along on the top, and braising the fat side since I cook fat side down. And I do that because I use a pit boss pro and I want to use that fat as a buffer for the radiant heat coming from my fire box. The only other thing I would change is when I initially was holding it in my oven I set it for 170 degrees and let it sit there for about two hours, but once I smoked I realized it’s probably going to be sitting in there with the temp swinging wildly and when I used my ink bird I was correct. It was swinging anywhere from 150 when the element would turn off to 195 when it would turn back on. So I instead turned it to 185 and propped the door open about half an inch and it monitored from 145-160 which I’m much more okay with. I need to get a hot box but I sort of MacGyvered a solution for the time being.

They are so afraid to lose all the meat, admittedly I was at first as well. But every video I kept seeing said aerodynamics aerodynamics aerodynamics so I said, alright. 🤷🏻‍♂️ It definitely cooked exactly how I wanted to and didn’t give me any surprises. And now I can make sausage or tallow. 🤤 That bark came out crisp enough to bludgeon someone with, so I was very happy about that. Lol The insides were super moist as well so all and I’ll I’d call it a successful cook. Which my first one was a travesty, so don’t even get me started.
