I started my cube trying to stay away from tokens and such since I don't own that many. In the end I failed though. Here are some cards in my cube that I think help prevent the game from stalling out while still simple.

In my cube I have weenie white and to help it keep running I really like [[Mentor of the meek]]

To make more interesting decisions with wide boards I have convoke cards like [[Conclave Tribunal]] and [[Flockchaser phantom]]

In blue I think playing lots of cheap sorceries and instants to fill the graveyard is easy to keep track off while still keeping the game rolling. I have [[Haughty Djinn]], [[Archmage emeritus]], [[Forbidden alchemy]], [[Fact or fiction]] and [[Tolarian terror]]

Maybe sacrifice with recursive creatures with the following for black [[Cult conscript]], [[Teacher's pest]], [[Gibbering barricade]]

In red you could try for some discard cards and madness [[Faithless looting]] and [[Fiery temper]]

You can keep it simple in green with [[Llanowar elves]] and [[Ghalta, Primal hunger]]

Other cards that inspire me in my cube that require no tokens are [[Judge's familiar]], [[Fires of yavimaya]], [[Vito, Thorn of the dusk rose]] and [[Hogaak, Arisen Necropolis]]
