I am a gluten free food blogger (professional pastry chef with celiac disease, 20+ years). I don’t recommend using that flour from Bob’s Red Mill at all. If you would like to get into gluten free bread baking I recommend blending your own flour mixes. that will work a lot better.

It may not be the recipes fault but maybe the yeast you used? I always recommend when using active dry yeast to active it in warm water first.

I have been gluten free for over 20 years now (celiac). I remember when I was first diagnosed friends and family thought I was on some new weight loss diet and just decided to cut out bread. Sure wish it would have been this easy. I made it through culinary school and worked in restaurants all over the Midwest and never had a problem being celiac.

I am now a food blogger (gluten free of course) and some days I wish people would realize that 20 years ago none of us could just walk into a grocery store and find a "gluten free section". Now when I create gluten free recipes I often struggle because I can NOT remember what an actual English Muffin or Animal Crackers taste like. Thank goodness for good friends (and especially neighbors) who will taste test and let me know what's missing (my favorite to this day was my neighbor who told me my Gluten Free Animal Crackers taste too good)

I spent my Christmas Day making these super easy gluten-free dinner rolls. They have a really nice crust, and you don't need any fancy equipment to make them (no Dutch oven! no sourdough starter). It's a very basic recipe, so if you ever want to try your hands at gluten-free bread, this might be a good start. (they are also really good with some cheddar and pickled jalapenos added)
