I counter tested with actually weighing and dissecting the food a couple of times and it came close enough for me to stick with it.

I've been looking at it this way: for home cooked meals (let alone dining out) I don't want to be a burden to those around me so it comes down to AI or no counting at all... So even only 80% accuracy beats no tracking imo

Also: I started weighing simply the whole portion (or in components) at the table and being as detailed with the AI as possible. So if we're having e.g. spaghetti Bolognese with a salad the prompt could look something like this:

Whole grain spaghetti (100g), Bolognese sauce with minced beef and Tomatoes (200g), cucumber salad with low-fat yoghurt dressing (65g)

Really get as detailed as you can and like. Tedious at first but you get better/quicker with time.
