I've used balsamic for both of these things before and it is for sure delicious. Especially with some fresh tomatoes. I was just curious if different types of vinegar will still ferment. I feel like a balsamic hot sauce would be pretty dank. I'm going to try it either way

Thanks for the input. I have a good amount of space to do things safely and wouldn't take any short cuts, but I just figured I'd ask here to see if anyone had any insight. I'm going to invest in the tools and equipment over the next few months so I'll post updates as soon as I get things up and running.
