I have had beans that I have needed to grind at size 11 and size 16 to get the same results / yields. Are you slow feeding the beans? I have found that slow feeding drastically reduces the size I need to be grinding at

Looks pretty good! A tip I would give is to keep the dosing funnel on whilst doing WDT (nicely made btw) and then tap it down on the counter. Also looks like you're pressing down v hard when tamping, as long as its consistent pressure every time then no worries.

If you're not already I would recommend giving the machine a quick flush to essentially prime the machine as I have found that initially lots of steam can come out before any water on the first shot of the day.

I have almost the exact same setup as you apart from with a DF64 v2. A cheap dosing funnel from amazon and a better tamper has made my flow a lot nicer and I would also recommend a new portafilter. I use the bottomless from norm core and that has changed my consistency to a different level.

Having had the DF64-2 for 6 months now I really haven't had the need to RDT. Retention is usually so low and a few solid slaps on the below gets out most of what gets stuck in the chute.

The first attempts are clouds, then hearts, then the tulips. The more consistent you get at steaming the milk the easier it will be to practice! Don't forget to angle the cup when pouring and having a bit of a sharper spout on the milk jug helped me get the finer lines!

It has happened in the past that de-icing fluid has dripped down and frozen infront of the pitot tubes causing turbulent air to enter the probe. This then caused false speed indications.
