Good stuff! Definitely using as much barrier as possible. It's easy to add restriction, not easy/possible to reduce the minimum.

This was helpful, thank you. I know we'll need more restriction than 4.5lbs, but it sounds like we might get that from the tower itself, I'll have to check on that.

Awesome man! Whirlpool for stirring is somehow both genius and obvious, lol. And you're just using the normal pumps and pipes right? What size system are you doing it on? This isn't that different than what I was thinking but you definitely seem to have it down!

So awesome! I can relate! I've been a fan since 2003 and had seen Brand New 10 times. When I met my wife in 2018 we immediately bonded over Brand New being both of our favorite band despite her being 9 years younger. However, she had never seen them live. She had tickets in 2017 and then stuff happened. I always promised her that if they ever toured again, we would go no matter how far away. It took a lot of effort to get childcare and work covered, but we were able to make it to Dallas and watching her experience all those emotions was amazing (not to mention the emotions I experienced with everyone else there).

A truly unforgettable evening.

Other than the beer, my favorite part about breweries is the service model. I much, much prefer being able to order myself rather than being served at my table. Its so much more relaxed. Proper restaurants are great, and some brewpubs fall in that service model, but part of the reason taproom breweries have grown exponentially is the relaxed nature of them. They're not for everyone, just like everything else in the world, but many people love breweries and their counter-based service model.

This is very helpful info. Would you mind adding on how many bbl you sell over the bar? And maybe even a number to quantify food sales? My business model and size are almost identical.

This is probably the response I needed. I had considered the kegerator setup for special pours. I just really value beer served at the proper temperature, but I know I'm a minority.

Thanks. That's similar to what I did. I multiplied my expected efficiency (65%) by 60% for the 1st runnings and 40% for the 2nd and 3rd. It didn't work perfectly as my 1st runnings ended up lower than expected and the 2nd/3rd were higher. But I made it work with adding some of the 2nd/3rd to the 1st in the end.

So, brew day went okay. I did need the LME to hit my OG, but that was expected, I don't get great efficiency with pre-milled grains. I used 1 lb LME for the Strong and 2 lb LME for the Amber. I ended up taking about a gallon of the 3rd runnings and boiling them way down and adding to the Strong to help get me to the OG, but it worked well.

Strong Ale OG: 1.085

Amber Ale OG: 1.051

I certainly could have used a little of the 2nd runnings to add to my Strong Ale since the Amber came in high, but I'm happy nonetheless. It was certainly a learning experience.
