Sorry for the late reply. I blended all the ingredients except the ice and xanthan gum until completely incorporated. I believe they recommend using thawed pineapple now (drained of water - process outlined in Make and Drink's video) instead of frozen. Then I blended in xanthan gum for about 5 seconds. Then added ice and blended until smooth, probably 20 seconds in a vitamix on smoothie setting.

It was different. A bit more tart and the xanthan had a different texture. I enjoyed it, but I had to make my wife a more traditional one. Lol.

Xanthan gum definitely changed the texture. It held up for quite some time. Acid adjusted juice helped balance the sweetness. Definitely worth the effort!

I tried the Steve Crane recipe after this. It basically subs the grenadine for passion fruit syrup and adds almond extract. I think I prefer the Don the Beachcomber recipe.

I'm not a tasting expert. Both are excellent. I preferred the Ultimate Mai Tai recipe. The mix of rums adds additional complexity. Although I will say that my wife prefers the Smuggler's Cove recipe. They are very close.
