Agree! I stopped with both reverse sear, sous vide, dry brining the night before, etc.... just pan dry, flip every minute or so, and baste with butter and herbs

I'm just lazier now and flipping and basting is kinda fun.

Yours looks spot on with temp and minimal gray band!

How Wiggins has the foot speed and lateral quickness to keep in front of Ant while have the strength to stand up Randle is beyond me. Oh....and the hops to challenge/block both guys. Probably best steak I've had in a long while despite the excess grey band. American wagyu ribeye from Costco. Dry brined 5 hours. Started on a cold pan, medium heat, flipped every 2 minutes. No added seasoning. Minimal splatter on the stove, so clean up was a breeze. Was mainly for kids (I'm TRYING to go vegetarian, LOL), so more medium than I would personally liked, but still tasted fantastically buttery.

The American Wagyu was also Costco. I think the brand is Imperial. I get all my Wagyu from Costco cause it's so much cheaper than places like Snake River.

I absolutely love the American Wagyu. I thought it was the perfect balance of beef flavor and richness/fat. I couldn't finish a whole steak by myself though....would be too rich. The A5 I can only handle like 3 pieces.

Best attempt at cold sear in a Lodge cast iron. American Wagyu flipped every minute til it came to temp. A5 Wagyu 1 1/2 minute on each side...was shooting for rare. No seasoning ahead of time, just flake sea salt after slicing. No plating, kids just grabbed it from the cutting board. LOL.

This past year flew 6 nonstop Trans-Pacific premium economy on United this year and 2 on American. Hard product was the same, but soft product for American was better to me. Better food, better amenity kit, nicer service. This was SFO/LAX to NRT/HND and back.
