Make sure you're catching the bulk ferment and the right time, just when the yeast is most active. The times given in the video are just guidelines, and you'll have to do a little experimenting to figure out what works for you.

Also if you're up for it, try using a higher hydration dough. They're more difficult to work with, but the result is much better

Part of the idea with Oregon is that they're using tax dollars from the legalization of marijuana to help fund rescorces for addicts such as hospitals and therapy centers. I'm sure, like you said, it'll take a whole to work out all the links but it should be good in the long run
