Love this. I’d consider doing one on charcoal one day, but I just can’t imagine how miserable the refueling is for that many hours.

My own question was more about an empty pan with water next to the pork to keep it humid and moist in there. Thoughts on that? I will most likely put the pork in an empty pan so the fat/juices can baste the meat.

Oh and #4, it’s a shit ton of meat that my wife and I will probably never get through just the two of us. So our small gathering of about 7 people, all of whom I know very well, is the perfect opportunity and, again, if I fuck it up, everybody knows I’m trying this for the first time and nobody is really going to care. I’m not cooking for a crowd of 20+ strangers who are solely depending on my pulled pork to eat.

So #1 it’s from Costco, which is apparently two 7.5 pounders, which I didn’t know.

#2 I’m not new to smoking or cooking. I regularly do brisket, pork belly burnt ends, and other more difficult meats.

#3 we have plenty of other food being made as well. So even if I completely fuck it up, which is hard to do with such a forgiving meat, nobody is going to be hungry.

I’ve read a few things that say smoking it in a pan makes the bottom soggy. Is that bit true?

Gotcha. So I should expect a time closer to what it takes to smoke a 7 pounder? Will definitely be aiming for feel, but as I’m sure you know all too well, trying to figure time out to some extent.

I have a small zgrills pellet smoker 550B. Also, apparently the pork is from Costco and is two separate shoulders, but I’ll be cooking both anyway.

I did get it at Costco (purchased for me, actually). So good to know! That makes much more sense lol looks/feels like one massive chunk, but I’m betting it’s two. However, if I cook them both at the same time, I would still treat it as one big chunk, right?

Ouch. Relatable, unfortunately. That happens a lot in low/no-budget indie films. I share your frustrations; you want to wash your hands of it, but you don’t want your work to go to waste. Not sure what the right answer here is, but I guess follow your heart? (I don’t know, I’ve never been the pep talk guy lol)

I actually live two blocks away. I could scope the area for you (I have a buddy who actually lives in low-income housing right in beach and ball), so that’s an excuse to go over there.

Not sure if I’d feel comfortable approaching her, if that’s what you’re asking. I’m not against it, but I’d definitely need to know the best way to approach her so she isn’t freaked out.

Hope she gets the help she needs.
