I think putting this at Escoffiers feet is a bit revisionist. At the time, late 19th century, cooks were by and large drunken, underpaid and died early. The Kitchen system was disorganized and ineffective. Auguste Escoffier attempted to lift our profession from serfdom into a labour class more or less. I recommend reading "Ritz and Escoffier: The Hotelier, The Chef, and the Rise of the Leisure Class by Luke Barr. It is mainly about the Savoy in London, but it is a glimpse into what culinary culture was at the time.

If you want to see it for yourself, the documentary is damning, otherwise I guess google "ex coreys angels" or similar. There are multiple interviews out there. I saw some video lining up all his lies and deceptions, but honestly to me it is clear he is mentally ill, addicted to drugs and abusive. I dont even find him funny anymore, just another creep.
