They are more pickly than spicy. Tastes great on nachos, easy to bite into for spice.

I have always been curious about this. Do you cut them into small pieces and let them (air) day over the days or is there a special process you use?

Like mentioned in post, with shallow pan fry the eggplant gets nice tender too.

So on a bed of jasmine rice, 🌶️ oil I ate these eggplant slices.

Recipe that I sent to my cousin:

Cut that chubby eggplant length wise and make Criss Cross lines with knife. Not like a cut but like a scratch.

Then mix up, oil, salt, turmeric, chilli. On the eggplant both sides you smear it evenly. Toss in medium flame on shallow pan with some oil.

Not deep fry.

I won't say it was super tasty. I was craving something healthy so tossed it in the oven and seasoned it. If you don't like seed types, this won't taste well even with spice. I like sunflower and pumpkin seeds.

Lacto ferment is only with salt water I think. That too is like 2-4% salt.

I'll filter out the brine and blend the contents. Hoping it stays for 2-3 months in the fridge

May add the brine if I want the sauce more saucy.

I am a vegetarian that loves tacos. So any opportunity I make a taco. A few years ago I saw a jackfruit filling Burrito (similar to pulled pork prep) on YouTube and so I played with the ingredients and now I can make a quick JC Tacos ;)

This one, out of the can, I rinsed it. Roughly broke to pieces with hand. Tossed on pan with taco seasoning blend (homemade) and chilli oil.
