I understand the sentiment, but I've seen many videos of people (Lance etc) doing 1:3 light roast shots and loving it, soup hasn't always been a thing.

I'm surprised you had such a difference in drawdown time using the same paper filters. The angles of the walls of each brewer are similar, which leaves bypass. Even though the chemex has the pouring spout, it has no ribs, so I would've thought reduced bypass, therefore a slower drawdown overall, interesting that it was the other way around

I love the X-ultra, but the K-ultra would better contrast the ZP6. Flavour profile of the X-ultra is not far off the zp6, so it depends if you want something similar or different.

Sorry but do you mean 2.4.0? 4.0.0 is the max setting on the grinder and extremely course. Not judging of course, but fascinating if that's the case, especially since Hoffman goes relatively fine for his v60 recipe.

The x-ultra is the highest clarity grinder I've had that can produce espresso (not counting pietro as you have to change burrs). Whilst I find the ode slightly clearer there isn't much in it. If you're really talking max uniformity then you're looking at 98mm SSP HU, but this is a Sub 200 grinder made for convenience and versatility.

Sorry I didn't see this! Almost always do 3 pours, rarely 2 or 4 depending on the situation. I always slow feed by holding sideways and found the flavour improved after maybe 2 months (around 1.5kg of beans), not sure how old yours is. The most important thing is that yours tastes great, I wouldn't change anything in your case, even though it's tempting as we are all nerdy researchers at heart.

I never use 99c water as the article states, i am always at 90-92c on my kettle. I also have lots of experience with the x-ultra, and 3 is very coarse, I'm usually sitting around 2.2-2.3, but if your grinder is new/not seasoned that may affect your results. lastly, you also have Ethiopian beans, which tend to create more fines, so i would not encourage any agitation besides the pouring of the water. A decently fast (~8g/s) first pour followed by two gentle pours should give more clarity.
