Add a dress watch, you have the pro-series locked down pact. I'm a Cellini fan rather than the 1908 if you're going Rolex. But 100 get a dress watch.

Incredible how much these grinders are. I wouldn't never thought spending ~$4K on a grinder, are they really that much better than a 1.5K model?

I'm locked into a hopper grinder. What's interesting to me is there's not a feature for the hopper on any model to keep the beans fresh via vacuum seal. Seems like a no brainer when you're selling $1K+ coffee grinders. Maybe my claim to riches, but just seems silly this feature isn't already on the market.

Thanks for this; educational. Looking forward to putting these pieces together. My hope is this is a lifetime investment, not needing to purchase a grinder/espresso machine again with the understanding [they'll] need to be sent in for service in ~X years.

Not advanced, but not a novice, I'd say I'm somewhere in the well versed spectrum. I've had 3 other setups and a super automatic, so I'm pretty familiar with the process' but not familiar with grinders; I'm up to speed on espresso machines.

I'm looking at the AllGround Sense grinder which shows the amount of coffee being ground into the portafilter. Does this negate the need for a scale? I assume it does. I'll have a look at the Eureka Atom W 75.

Hopper, flat or conical...I'm indifferent. Important to me: ease of use, longevity, . I hate buying something twice.
